Your responsibilities as Head Butcher
  • Lead the day-to-day running of the butchery department
  • Carry out and oversee full carcass breakdown across beef, lamb, and pork
  • Manage production levels to meet wholesale and hospitality demand
  • Maintain high standards of quality, consistency, and presentation
  • Oversee stock control, waste reduction, and yield optimisation
  • Manage food safety compliance, HACCP procedures, and external audits
What we’re looking for in a Head Butcher
  • Previous senior-level butchery experience within production or wholesale environments
  • Strong knowledge of full carcass preparation across multiple species
  • Background managing compliance, hygiene, and food safety standards
  • Experience overseeing production planning and operational performance
  • Ability to train and develop butchery teams effectively
Hours: 6:00am – 3:00pm, 5 days out of 7.
